Ingredients:

(for two person)

  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized chunk
  • 5 sun dried tomato
  • 2-3 tablespoon olive oil
  • ¼ teaspoon fine sea salt, to taste
  • ¼ teaspoon freshly ground black pepper, to taste

Sauce:

  • ½ cup low sodium soy sauce (or gluten free tamari)
  • ¼ cup water
  • 2 tablespoons honey (use raw)
  • 1 teaspoon sesame oil
  • 1 ½tablespoons apple cider vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger

Directions:

  1. In a wok stir fry chicken, salt and black pepper.
  2. Make the sauce in a medium bowl, whisk together all the ingredients for the sauce, and mix with a chicken.
  3. Sprinkle with sesame seeds, green onions and serve over rice, quinoa or zoodles, if desired.
