Ingredients:
(for two person)
- 2 pieces boneless, skinless chicken breasts, cut into bite-sized chunk
- 5 sun dried tomato
- 2-3 tablespoon olive oil
- ¼ teaspoon fine sea salt, to taste
- ¼ teaspoon freshly ground black pepper, to taste
Sauce:
- ½ cup low sodium soy sauce (or gluten free tamari)
- ¼ cup water
- 2 tablespoons honey (use raw)
- 1 teaspoon sesame oil
- 1 ½tablespoons apple cider vinegar
- 2 garlic cloves, minced
- 1 teaspoon grated fresh ginger
Directions:
- In a wok stir fry chicken, salt and black pepper.
- Make the sauce in a medium bowl, whisk together all the ingredients for the sauce, and mix with a chicken.
- Sprinkle with sesame seeds, green onions and serve over rice, quinoa or zoodles, if desired.
